Spring is in the air, birds are chirping, and the world is bursting into color - Easter is just around the corner! For me, Easter was never just about chocolate bunnies and candy-filled baskets. Sure, the Osterhase made a visit, but instead of only hiding sweets, he left behind little treasures that made my day: sparkling crystals, colorful pencils, tiny doll clothes - thoughtful little surprises that felt magical as a kid.

While Easter is often associated with chocolate eggs, my family was never big on gifting overly processed sweets - unless, of course, it was a special marzipan creation! Instead, Easter morning was a time of discovery and excitement as I searched for hidden treasures left by the Osterhase. These thoughtful little gifts reflected creativity, playfulness, and a love for the simple joys in life.

That’s exactly the feeling I want to bring into the kitchen with this homemade chocolate beet cake - a dessert that’s both a treat and a nourishing delight.

A Healthier Easter Treat: Chocolate Beet Cake (Oil-Free & Plant-Based)

This cake is a true showstopper: rich cocoa flavor, natural sweetness from beets and dates, and a beautifully moist texture. Whether you’re sharing it with family, serving it at an Easter brunch, or simply enjoying a slice with a cup of tea, it’s the perfect guilt-free indulgence. Plus, it pairs wonderfully with my handmade potholders and aprons - because baking should be as stylish as it is fun!

Not to forget: The chocolate beet cake is an old ‘Grandma's secret’ to make her children eat what is good for them.

Ingredients

For the Cake:

Whole-wheat flour 1 ½ cups
(or whole-wheat + almond flour mix) I like this the best! 1 cup + ½ cup
Unsweetened cocoa powder ½ cup
Potassium bicarbonate 1 tsp
Finely grated cooked beets 1 cup
Unsweetened plant milk 1 cup
Date paste ½ cup
Apple cider vinegar 2 tsp
Vanilla extract 1 tsp
Molasses or date syrup ¼ cup

For the Frosting:

Silken tofu (drained) 1 cup
Unsweetened cocoa powder ⅓ cup
Date syrup or molasses 2–3 tbsp or 1–2 tbsp
Vanilla extract 1 tsp


Step-by-Step Instructions

  1. Preheat the Oven: Set to 350°F (175°C). Line an 8-inch round cake pan with parchment paper or use a silicone mold.
  2. Prepare the Beets: If using canned beets, drain, rinse, pat dry, and finely grate or blend into a purée.
  3. Mix Dry Ingredients: In a large bowl, whisk together whole-wheat flour, almond flour (if using), cocoa powder, and potassium bicarbonate.
  4. Combine Wet Ingredients: In a separate bowl, mix beets, plant milk, date paste, molasses (or date syrup), apple cider vinegar, and vanilla extract until smooth.
  5. Mix the Batter: Gradually stir the wet mixture into the dry ingredients until just combined. Don’t overmix!
  6. Bake: Pour into the pan, smooth the top, and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool Completely: Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  8. Make the Frosting: Blend silken tofu, cocoa powder, and sweetener of choice until creamy. Spread over the cooled cake.
  9. Serve & Enjoy! Decorate with berries, cacao nibs, or a sprinkle of cocoa powder.

The Symbolism of the Easter Bunny & Eggs

Did you know that the tradition of the Easter bunny delivering eggs has roots in ancient folklore? The hare was sacred to Eostre, the Anglo-Saxon goddess of dawn and fertility, and eggs have long been a symbol of rebirth and new beginnings in the spring. Some scholars suggest that Eostre’s name may be the origin of the English and German words for Easter. Over time, these traditions merged into the modern-day Easter Bunny, who hides colorful eggs and treats for children to discover.

Easter is a gentle reminder that life is full of renewal, hope, and new beginnings. It celebrates the beauty of fresh starts, the joy of simple moments, and the comforting truth that love never truly fades. This is what makes Easter especially personal for me. At a young age, I lost very close family members, including my Dad and Grandma, quite suddenly. The grief was immense and at times unbearable. After pursuing my career in fashion, my path led me to study Evidential Mediumship, the sacred communication with loved ones in the spirit world.
