🎃 Pumpkin Spice Latte Recipe (1 Serving)

American/British Ingredient German Equivalent
☕ Latte
2 tablespoons pumpkin purée (30 g) 30 g Kürbispüree
½ teaspoon pumpkin pie spice (1 g) ½ TL Kürbisgewürz
1 cup soy milk (240 ml) 240 ml Sojamilch
1½ tablespoons date syrup (30 g) 20 g Dattelsirup
4 shots brewed coffee (120 ml) 120 ml starker Kaffee oder Espresso
🍦 Whipped Cream
¼ cup chickpea liquid (Aquafaba) (60 ml) 60 ml Aquafaba
1 teaspoon lemon juice (5 ml) 1 Teelöffel Zitronensaft
1 tablespoon erythritol (12 g) 12 g Erythrit

Instructions 

  1. In a small saucepan, combine the pumpkin purée, date syrup, and pumpkin pie spice over low heat. Stir constantly for about one minute to prevent burning.

  2. Add the soy milk, increase the heat, and whisk until hot but not boiling.

  3. Pour the mixture into a blender and blend on high until smooth and frothy for the best texture.

    • In a separate bowl, combine the chickpea liquid (aquafaba) and lemon juice.

    • Whip on high speed until stiff peaks form (about 7–10 minutes).

    • Add erythritol slowly, one spoon at a time, continuing to whip until the cream is glossy and firm (about 3–5 more minutes).

  4. Pour the coffee into your mug, top it with the pumpkin spice mixture, and finish with a dollop of your vegan whipped cream.

  5. Sprinkle a little extra pumpkin spice on top—and enjoy!
