This cake is a true showstopper: rich cocoa flavor, natural sweetness from beets and dates, and a beautifully moist texture. Ingredients
For the Cake:
Whole-wheat flour | 1 ½ cups |
(or whole-wheat + almond flour mix) I like this the best! | 1 cup + ½ cup |
Unsweetened cocoa powder | ½ cup |
Potassium bicarbonate | 1 tsp |
Finely grated cooked beets | 1 cup |
Unsweetened plant milk | 1 cup |
Date paste | ½ cup |
Apple cider vinegar | 2 tsp |
Vanilla extract | 1 tsp |
Molasses or date syrup | ¼ cup |
For the Frosting:
Silken tofu (drained) | 1 cup |
Unsweetened cocoa powder | ⅓ cup |
Date syrup or molasses | 2–3 tbsp or 1–2 tbsp |
Vanilla extract | 1 tsp |
Step-by-Step Instructions

Preheat the Oven: Set to 350°F (175°C). Line an 8-inch round cake pan with parchment paper or use a silicone mold.
