Not only are they delicious, but they’re also rich in vitamins and antioxidants, making them a perfect choice for guilt-free desserts. Mangos are often referred to as the "king of fruits," and for good reason. They are not only deliciously sweet and juicy but also packed with essential nutrients. Rich in vitamins A and C, mangos contribute to healthy skin, boost the immune system, and improve digestion. The unique flavor profile of mangos makes them incredibly versatile, whether enjoyed fresh, blended into smoothies, or used in desserts.

The Importance of Guilt-Free Desserts

I’ve always believed in the power of nourishing the body with wholesome ingredients. Guilt-free desserts are a delightful way to indulge without compromising health. By using natural sweeteners, whole fruits, and healthy fats, you can create treats that satisfy your sweet tooth while providing essential nutrients. My go-to healthy sweeteners are dates and date sugar, which I consider the healthiest sweetener on the planet because it's made from pulverized whole dried dates, making it a whole food. It’s all about balance and making mindful choices that fuel your body and spirit.

When I think of melons and mangos, I’m instantly transported to the lush landscapes of the tropics. This vibrant combination reminds me of my visit to the Fruit & Spice Park in the Everglades near Miami in 2023. The park is a treasure trove of exotic fruits, and seeing mango trees there was a highlight of my trip. Mangoes are among the most heavenly food-producing trees in the world, having been cultivated in India for over 4,000 years. The first known mango was introduced to Florida in 1833, marking the beginning of this delightful fruit's journey in the Americas.

A Fond Memory of Stupsi

Speaking of delightful memories, I can’t help but reminisce about my childhood guinea pig, Stupsi. A true foodie at heart, she was always eager to sample whatever I was eating. I’ll never forget the day she tried to nibble on my breakfast toast with chocolate spread, showcasing her adventurous spirit and love for delicious food! In her honor, I designed a cute Guinea Pig Mug that reflects her vibrant personality; I even dressed her up as a chef for Halloween! Mango Parfait Recipe

Servings:
2 Parfaits
Prep Time: 15 minutes (plus 10 minutes soaking & 3 hours in the refrigerator) 

Ingredients for 2 Parfaits
Mango Base, blended Amount
Ground chia seeds 3 tbsp
Frozen diced mango 1.5 cups
Fresh lemon juice 1 tsp
Soft dates, pitted and soaked for 10 minutes 2 dates
Water 1.5 cups
Date sugar 2 tbsp
Mix-in
Oats (for each bowl, not blended) 2 tbsp
Topping
Mixed melons & grapes
Chocolate sauce & sliced almonds
Chocolate Sauce
Tahini (use the liquid part) 2 tbsp
Cocoa powder 2 tbsp
Date sugar 2 tbsp
Water (as needed)


Instructions:

  1. Prepare the Mango Base:
    In a blender, combine the ground chia seeds, frozen mango, lemon juice, soaked dates, water, and erythritol. Blend until smooth and creamy. 

  2. Mix in the Oats:
    Divide the mango base evenly between two bowls or parfait glasses. Stir 2 tbsp oats into each serving. Let the mixture sit for about 3 hours in the fridge to thicken slightly.

  3. Make the Chocolate Tahini Sauce:
    In a small bowl, whisk together tahini, cocoa powder, and erythritol. Slowly add water, one teaspoon at a time, until you reach your desired consistency (should be thick but pourable).

  4. Assemble the Parfait:
    Top each mango parfait with a mix of melons and grapes. Drizzle with the chocolate tahini sauce and sliced almonds for a rich, indulgent touch.

  5. Serve & Enjoy!
    Enjoy your refreshing, tropical parfait for breakfast, a snack, or a healthy dessert!
